Solving the Nutrition Compliance Gap: 3 Insights from a Registered Dietitian at Argentum

On the floor of the Argentum Senior Living Executive Conference, I kept hearing the same concern from operators and culinary leaders: compliance is getting harder to keep up with. With evolving requirements and limited bandwidth, teams are looking for more practical ways to mitigate risk without adding more complexity.

As a Registered Dietitian who’s spent over 23 years in senior care, both inside communities and supporting thousands more across the country, these challenges felt hauntingly familiar.

Here are the biggest takeaways from my conversations at Argentum and the number one thing I recommend communities focus on next.

1. Communities Need More Support Navigating Nutrition Compliance

Many culinary leaders I connected with had the impression there were little to no state nutrition-related requirements that applied to their operations. They were surprised to hear that in fact many states have regulations tied to therapeutic diets, menu oversight, hydration, documentation and nutrition services.

To me, this gap points to a much larger opportunity for education and operational support in the industry.

Assisted Living operators are juggling enormous responsibilities, and many simply don’t have the time or resources to stay current on evolving regulations.

The last thing communities need is more complexity in their days. They deserve support systems that make compliance and nutrition operations easier to manage, including:

  • Simplified workflows
  • Better visibility into nutrition-related risks
  • Standardized documentation
  • More connected technology and reporting systems
  • Access to dietitian expertise when needed

This is especially important in Assisted Living and SNFs, where teams are often balancing hospitality-focused dining with increasing clinical complexity.

2. In-Person Dietitian Support Still Matters

Of course, technology was a hot topic throughout the conference. It makes sense — communities are looking for ways to improve efficiency and lighten the administrative load without expanding their team.

But what really stood out is that technology works best when it’s paired with the right people.

Operators still place a huge amount of value on relationships and onsite support. I kept hearing that teams want partners who will walk the building, see things firsthand and work alongside them to solve problems in real time.

Because every community is different, generic recommendations just don’t always land. What teams really need is support that feels practical. People who can spot issues early, work directly with staff and help prioritize what matters most, with technology there to support and scale those efforts.

Communities are looking for dietitians and consultants who can:

  • Work directly with onsite teams
  • Provide realistic recommendations
  • Support survey preparedness
  • Help prioritize operational improvements
  • Collaborate instead of simply auditing

That combination is where things really start to click. Technology helps create visibility and efficiency, but it’s the onsite collaboration that turns those insights into real improvements.

3. Operators Want Earlier Visibility into Operational Risks

Another theme that came up repeatedly was the need to catch issues earlier.

Leaders don’t want to find out something is wrong after it turns into a resident complaint, a survey issue or a bigger operational problem.

They’re looking for better visibility into what’s happening inside their communities before things escalate.

That’s why there’s so much focus right now on dashboards and reporting. But at the same time, many teams are feeling overwhelmed by too much data. The challenge isn’t more reports, it’s having the right visibility that helps teams take action quickly and stay ahead of risks.

What communities are really looking for are tools and support that help them spot trends sooner, stay aligned across teams, keep a closer eye on compliance and reduce duplicate work, all while making it easier to follow up when something needs attention.

This is where a more connected approach starts to make a difference. Bringing together technology, dietitian expertise and operational support helps turn insights into action, without adding more complexity for already stretched teams.
